Ingredients
  • 5 cloves of garlic
  • 1 lemon grass stalk
  • 1 inch knob of ginger
  • 3 tbps curry powder
  • 1 tbp fish sauce
  • 1 cup coconut milk
  • 1-2 cups of water
  • 1 medium onion
  • 1 lb chicken thigh
  • 2 medium white potatoes
  • 3 carrots
  • salt
  • fresh pepper
  • 1 chili pepper
  • olive oil

Steps
  1. *Prep the marinade:
  2. crush 2 cloves of garlic
  3. mince 1 tablespoon of lemon grass (bottom end)
  4. grate 1 tablespoon of ginger
  5. 2 tablespoons of curry powder
  6. 1 tablespoon of sugar
  7. 1 tablespoon of fish sauce
  8. 1 teaspoon of salt
  9. 1 lb of chicken
  10. 1 sliced chili pepper
  11. *Preparation:
  12. Cut carrots and potatoes into bite sized pieces
  13. Bruise the lemon grass stalk
  14. Mince 3 tablespoons of garlic
  15. Cut onions into wedges
  16. *Stir-Fry
  17. stir fry the onion wedges
  18. add 1 tablespoon of curry powder
  19. add the minced garlic
  20. stir fry for 2 minute
  21. Add the chicken and stir fry for 2 minutes
  22. *Adjust any seasonings accordingly
  23. too creamy - add water
  24. too watery - add coconut milk
  25. not salty enough - add fish sauce
  26. too salty - add water/coconut milk to dilute
  27. not sweet enough - add sugar
Recipe Notes
Vietnamese yellow curry is similar to Thai red and green curry, but instead uses turmeric as its primary flavoring agent. There are quite a few ingredients involved, but the preparation is actually pretty easy.
