Let seasoning permeate for at least an hour or overnight
Calculate your cook time and schedule (see below)

Take out of fridge and let rest for 60 minutes.
Cook at 450 degrees for 20 minutes
Cook at 325 degrees for 60 minutes
Rest for: 10 minutes
Total Time: 2.5 hours:

An hour before cooking (two hours if you have a huge roast), take the roast outside the fridge to bring it to room temperature
Pre-heat oven to 450 degrees F
Stick the probe thermometer in the middle of the roast, avoiding the bone
Set the probe thermometer alarm to 130 Degrees F.
Place the roast in the oven, with the thermometer outside
Cook the roast for 20 minutes @ 450 Degrees F
Cook the roast for 15 mins x number of lbs @ 325 Degrees F - OR until the probe thermometer rings
Tent the roast with foil for 10 minutes
