Ingredients
4 oz rice noodles
1 tbsp tamarind paste (see below)
2 tbsp sugar
2 tbsp fish sauce
some thai spice
firm tofu or meat
3/4 cup water
2 eggs
chives
1 diced garlic
bean stalk
roasted nuts
lime wedges
1 tbsp tamarind paste (see below)

Steps
*Preparation:
Be sure noodles are either fresh or reconstituted in warm water for 15 minutes
Microwave a 1" block of tamarind for 3 minutes in a bowl filled with water (cover with plastic wrap)
Drain the water and mash with a pestle
*Cook
Heat up the wok and cook the meat and garlic for a minute
Add the egg
Add the rice noodles, water, fish sauce, sugar, and tamarind
Cook until all the liquid is gone
Add beanstalk and chives
Garnish with roasted peanuts and lime
