Ingredients

  • Prime rib - preferably 2 bones at least
  • Dry seasoning - coarse salt, kosher salt, black pepper, thyme, and olive oil

Pre-Work:

  • Buy prime rib - decide:
  • 1) what marbling? (select, choice, prime)
  • 2) bone-in or boneless?
  • 3) how many bones? (or how many lbs)
  • Apply dry seasoning
  • Let seasoning permeate for at least an hour or overnight
  • Calculate your cook time and schedule (see below)

Day Of:

  • An hour before cooking (two hours if you have a huge roast), take the roast outside the fridge to bring it to room temperature
  • Pre-heat oven to 450 degrees F
  • Stick the probe thermometer in the middle of the roast, avoiding the bone
  • Set the probe thermometer alarm to 130 Degrees F.
  • Place the roast in the oven, with the thermometer outside
  • Cook the roast for 20 minutes @ 450 Degrees F
  • Cook the roast for 15 mins x number of lbs @ 325 Degrees F - OR until the probe thermometer rings
  • Tent the roast with foil for 10 minutes
  • Carve
  • Make your sauce
