Vietnamese Yellow Curry (Cari Ga) PDF Print E-mail


 

Vietnamese yellow curry is similar to Thai red and green curry, but instead uses turmeric as its primary flavoring agent.  There are quite a few ingredients involved, but the preparation is actually pretty easy.

Recipe:

Ingredients

  • 5 cloves of garlic
  • 1 lemon grass stalk
  • 1 inch knob of ginger
  • 3 tablespoons of curry powder
  • 1 tablespoon of fish sauce
  • 1 cup of coconut milk
  • 1 - 2 cups of water
  • 1 medium onion
  • 1 lb chicken thigh
  • 2 medium white potatoes
  • 3 carrots
  • salt
  • fresh pepper
  • 1 chili pepper
  • olive oil

Prep the marinade:

  • crush 2 cloves of garlic
  • mince 1 tablespoon of lemon grass (bottom end)
  • grate 1 tablespoon of ginger
  • 2 tablespoons of curry powder
  • 1 tablespoon of sugar
  • 1 tablespoon of fish sauce
  • 1 teaspoon of salt
  • 1 lb of chicken
  • 1 sliced chili pepper

Preparation:

  • Cut carrots and potatoes into bite sized pieces
  • Bruise the lemon grass stalk
  • Mince 3 tablespoons of garlic
  • Cut onions into wedges

Stir-Fry

  • stir fry the onion wedges
  • add 1 tablespoon of curry powder
  •  add the minced garlic
  • stir fry for 2 minute 
  • Add the chicken and stir fry for 2 minutes

 

Adjust any seasonings accordingly

  • too creamy - add water
  • too watery - add coconut milk
  • not salty enough - add fish sauce
  • too salty - add water/coconut milk to dilute
  • not sweet enough - add sugar
