I've had pesto sauce in pasta and in marinades. I've used the dry instant seasoning ones and I've used the pre-made containers of it. First time I actually made it from scratch and read several options for ingredients.
The basic ingredient is
- choice of green (generally basil, but could do spinach, arugula etc) - olive oil - choice of nuts - choice of cheese (generally pecorino or paremsan) - salt
I had almonds so I used that as nut option. Toasted raw almonds in a hot pan and seasoned w/ a little salt (not sure if the salt actually works on a dry almond on a dry hot pan). Then next step is mix all the ingredients and ta-dah! All done. The only issue is you have to have a decent food processor and a good amount of olive oil. Really takes a lot of olive oil to give it that smooth texture.
